Job Summary:
We are seeking a passionate and motivated Commis Sushi Chef to join our culinary team. As a commis chef specializing in sushi, you will support the senior sushi chefs in preparing fresh, high-quality sushi and sashimi, maintaining cleanliness, and ensuring food safety standards. Key Responsibilities:
- Assist in the preparation of sushi, sashimi, maki, nigiri, and other Japanese dishes.
- Maintain high standards of food hygiene, cleanliness, and organization in all areas of the kitchen.
- Prepare ingredients by cleaning, cutting, and organizing fish, vegetables, and rice under guidance.
- Ensure all food is stored and handled in compliance with food safety and hygiene regulations.
- Assist senior chefs with mise en place and service prep.
- Learn and follow recipes, techniques, and plating standards.
- Keep kitchen equipment clean and in good working order.
- Follow instructions from senior kitchen staff and take feedback constructively.
- Maintain stock rotation and assist with inventory as needed.
Requirements:
- Previous experience in a kitchen, preferably in sushi or Japanese cuisine (internships or culinary school graduates welcome).
- Basic knowledge of food safety and hygiene standards.
- Passion for Japanese food and a willingness to learn.
- Good knife skills and attention to detail.
- Ability to work under pressure in a fast-paced environment.
- Strong team spirit and communication skills.
- Flexibility with working hours, including weekends and holidays.
