Job Description
The Junior Sous Chef – Arabic Cuisine supports the Sous Chef in managing and executing high-quality Arabic culinary offerings in accordance with hotel standards. This role plays a key part in ensuring consistent food preparation, supervising junior staff, and upholding the authenticity, presentation, and taste of Arabic dishes, while maintaining strict hygiene and safety protocols.
Key responsibilities:
Assist the Sous Chef in daily kitchen operations, specifically focusing on traditional and modern Arabic cuisine.
Prepare and cook high-quality dishes, ensuring consistency in taste, portioning, and presentation.
Supervise and guide Commis and Demi Chefs in preparation techniques and station hygiene.
Ensure adherence to all health, safety, and sanitation standards during food preparation and storage.
Monitor kitchen inventory related to Arabic cuisine and assist in placing orders to avoid shortages.
Collaborate on menu development, suggesting innovative additions rooted in authentic Arabic flavors.
Ensure all mise en place is prepared ahead of service and that all stations are set up efficiently.
Conduct regular checks to maintain food quality, freshness, and kitchen cleanliness.
Handle guest feedback regarding Arabic dishes and make immediate improvements where needed.
Support cross-training initiatives to enhance team skills and coverage across sections.
Desired Skill & Expertise
Minimum 3–4 years of experience in a professional kitchen, with at least 1–2 years specializing in Arabic cuisine.
Diploma or certification in Culinary Arts or a related hospitality field.
Strong understanding of regional Arabic dishes, ingredients, spices, and traditional techniques.
Excellent knife skills, cooking methods (grilling, stewing, baking), and plating styles for Arabic cuisine.
Ability to lead a section independently and train junior chefs.
Familiarity with HACCP standards and Dubai Municipality hygiene regulations.
Flexible with shifts and able to work under pressure in a high-volume, luxury environment.
Proficiency in English; Arabic language skills are an added advantage.
