The jobholder is responsible for managing and validating recipes, culinary databases, and production plans. The role involves leading a recipe validation team, ensuring data accuracy in systems, and supporting ERP, code creation, and master data management. The Manager ensures alignment and operational efficiency across multiple departments, including Production, Catering Operations, F&B, Costing, Pricing, and Procurement. Additionally, the Manager supports the Food Technology team with technical standards and product validations, and leads the food photography section to document menu presentations in line with airline and business requirements.
Key Results Area:
Manage and maintain master data entries, including item codes, Bills of Materials (BOMs), and menu masters, ensuring accuracy for production, procurement, costing, and system integrity.
Oversee recipe and menu design projects, ensuring data scaling, portioning, and updates in line with culinary and food technology standards.
Facilitate the preparation and migration of operational master data for ERP implementation and system integration projects, ensuring data readiness and seamless transition across platforms.
Support the Food Technology team with technical validations, maintaining specifications, and implementing culinary quality standards.
Lead and manage the food photography section, ensuring end-to-end coordination of menu presentations, accurate documentation, and timely delivery of images aligned with airline and business specifications.
Execute daily Material Resource Planning (MRP) by generating accurate work orders and optimizing material usage in line with production plans and forecasted requirements.
Supervise procurement-related master data and inventory transactions, ensuring timely updates to stock levels, dispatch records, and order generation in operational systems.
Manage updates to Flight Schedule Master (FSM) and Daily Flight Schedule Master (DFSM) to align production and catering timelines with airline operational changes.
Provide data support for demand forecasting and planning by analysing consumption trends and contributing to the accuracy of Estimated Material Consumption (EMC) forecasts.
Collaborate with cross-functional teams including Production, Procurement, Costing, and Catering Operations to ensure consistency in data flow, recipe execution, and system-driven process improvements.
Education Qualification:
a) Bachelor's degree in IT, Business Administration, Computer Science, Finance, or a related field.
Work Experience:
a) Minimum 7 years of experience in supply chain planning, forecasting, finance, or culinary data management, preferably in the aviation industry.
Skills:
a) Proficient in ERP systems (JDE, SAP), CAT360, PAXIA, and demand planning tools for efficient data management and forecasting.
b) Strong knowledge of menu management, bill of materials (BOMs), and production planning processes.
c) Excellent skills in data analysis, problem-solving, and decision-making to enhance efficiency.
d) Ability to work with cross-functional teams and manage data-driven operations effectively.
e) Strong interpersonal and communication skills to collaborate with internal and external stakeholders.
f) Ability to perform effectively in a high-pressure, fast-paced environment while ensuring data accuracy and compliance.
