The Assistant Chief Steward supports the Chief Steward in overseeing all stewarding operations to ensure cleanliness, sanitation, and hygiene standards are maintained across kitchens, dishwashing areas, and storage spaces. This role involves supervising stewarding staff, managing inventory, enforcing safety protocols, and ensuring compliance with food safety standards.
Key Responsibilities:
- Assist in managing day-to-day operations of the stewarding department.
- Supervise stewarding staff to ensure efficient workflow and cleanliness.
- Maintain sanitation standards in accordance with local health regulations and HACCP guidelines.
- Support dishwashing operations to ensure timely turnaround of kitchenware.
- Oversee the maintenance of all stewarding equipment and schedule repairs when needed.
- Monitor and control breakage, loss, and inventory of kitchen equipment and utensils.
- Train and coach stewarding staff on proper hygiene and safety procedures.
- Assist in scheduling shifts, managing labor costs, and coordinating with HR as needed.
- Work closely with the culinary and food & beverage teams to ensure smooth operations.
- Ensure compliance with safety and emergency protocols at all times.
- Take over the duties of the Chief Steward in their absence.
Requirements:
- Minimum of [3-5] years of experience in stewarding or kitchen operations, with at least 1 year in a supervisory role.
- Strong knowledge of kitchen sanitation, chemical handling, and equipment maintenance.
- Excellent leadership, communication, and organizational skills.
- Ability to work in a fast-paced, high-pressure environment.
- Familiarity with HACCP and local food safety standards.
- Basic computer skills (e.g., MS Excel, inventory systems).
- Flexible schedule, including weekends and holidays.
Preferred Qualifications:
- Degree or certification in Hospitality Management or Culinary Arts.
- Experience in a luxury hotel, cruise line, or large-scale banquet operation.
- Multilingual ability is an asset.
