Job Summary:
The Cold Commis is responsible for preparing and presenting cold dishes such as salads, appetizers, mezze, sandwiches, and desserts in accordance with Al Hallab’s quality standards. The role supports the overall kitchen operations by ensuring proper mise en place, cleanliness, and consistency in cold food items.
Key Responsibilities:
- Prepare cold items including salads, mezze, dressings, sandwiches, canapés, and chilled desserts as per standard recipes.
- Ensure freshness and proper storage of all ingredients and cold products.
- Follow kitchen hygiene, safety, and sanitation procedures at all times.
- Label and date all stored food items to ensure FIFO (First In, First Out) rotation.
- Assist in setting up cold section mise en place before each shift.
- Maintain cleanliness and organization of refrigerators, prep tables, and cold rooms.
- Support other kitchen sections when needed during busy periods.
- Comply with Al Hallab’s food presentation standards and portion sizes.
Qualifications & Requirements:
- Ability to work efficiently in a fast-paced kitchen environment.
- Basic knowledge of food hygiene and kitchen safety standards.
- Strong attention to detail and presentation.
- Ability to work in a team and follow instructions from senior chefs.
- Flexibility with work schedules including weekends and holidays.
- Physically fit to stand for long hours and perform kitchen duties.
Job Type: Full-time
Pay: AED1,500.00 - AED2,700.00 per month
