About the job

Based at the Mandarin Oriental Downtown, Dubai within the Culinary Department in Dubai, the Asian Specialty Sous Chef is in crafting and executing our diverse menu of Asian-inspired dishes. Will ensure the highest standards of food quality, presentation, and taste. This position requires a deep understanding of Asian culinary techniques, ingredients, and cultural flavors. Asian Specialty Sous Chef reports to the Banquet Chef.

As an Asian Specialty Sous Chef - Banquet, you will be responsible for the following duties:

  • Create innovative, seasonal menus and dishes that align with the hotel’s quality and culinary vision.
  • Lead all kitchen activities, ensuring excellence in food preparation, presentation, hygiene, and safety.
  • Optimize food costs and inventory without compromising quality.
  • Educate kitchen staff in authentic Asian cooking techniques and ingredient use.
  • Work with restaurant management on special menus, events, and themed dining experiences.
  • Promote a culture of creativity, innovation, and staying current with culinary trends.

As an Asian Specialty Sous Chef - Banquet, we expect from you:

  • At least 3 years as a Specialty Chef or similar role in a luxury hotel or fine dining setting.
  • Deep knowledge of Asian cuisine, including ingredients, techniques, and regional variations.
  • Thai or Vietnamese speaking preferred.
  • Strong background in menu development, food cost control, inventory, and procurement.
  • UAE hotel pre-opening experience preferred; Middle East restaurant experience is a plus.
  • Excellent leadership and communication skills to guide and inspire a diverse culinary team.
  • Highly organized with strong attention to detail and a focus on quality and guest satisfaction.
