The CDP‑Sushi leads the sushi section within the restaurant, responsible for preparing, presenting, and maintaining exceptional quality sushi dishes. You’ll ensure culinary excellence and guest satisfaction in every plate, working closely with the Head Chef to adhere to precise recipes and hygiene standards.
Key Responsibilities
- Prepare a wide variety of sushi dishes—nigiri, sashimi, maki, specialty and signature rolls—according to established standards of taste, portion, and presentation
- Fillet, slice, and portion raw fish accurately, applying proper FIFO handling and quality checks
- Monitor ingredient quality—including fish, rice, condiments—and report any sub‑standard items to the head Chef.
- Maintain stock levels and perform regular inventory and requisitions to avoid shortages
- Supervise or train junior staff (commis cooks or demi‑chef), contributing to their skill development
Qualifications & Skills
