About the Opportunity
A leading high end beachfront dining destination in Dubai is seeking a passionate and experienced Chef de Partie specialising in Mediterranean cuisine – Cold Section. This is a dynamic opportunity to join a refined culinary team delivering high-end, ingredient-driven dishes in a vibrant, guest-focused environment.
Key Responsibilities
- Oversee the preparation and presentation of cold Mediterranean dishes, including salads, appetisers, and specialty items.
- Ensure consistent quality, portioning, and hygiene standards according to brand and HACCP guidelines.
- Collaborate with the Sous Chef and Executive Chef to maintain a seasonal, creative cold section menu.
- Train and guide Commis Chefs and other junior staff in cold kitchen techniques and mise-en-place.
- Monitor stock levels and requisitions to ensure optimal inventory control.
- Maintain cleanliness and organisation in the cold kitchen section at all times.
- Participate in regular kitchen meetings and contribute ideas for menu enhancement and operational efficiency.
Qualifications & Skills
- Minimum 3 years’ experience in a CDP role, with a strong background in Mediterranean cuisine, particularly cold section.
- Minimum 3 years' experience in a fine dining or upmarket restaurant environment
- Formal culinary training or certification is preferred.
- Excellent knife skills and understanding of cold preparation techniques, plating, and preservation methods.
- Familiarity with Dubai’s hospitality standards and food safety regulations.
- Ability to work efficiently in a high-pressure, fast-paced kitchen.
- Strong team spirit, reliability, and a proactive attitude toward culinary excellence.
