Job Title: Head Chef – Japanese Cuisine (with International Culinary Expertise)

Job Summary:
We are seeking a highly skilled and innovative Head Chef specializing in Japanese cuisine who also possesses a strong background in international culinary arts. The ideal candidate will lead our kitchen operations with creativity, precision, and a deep respect for traditional Japanese techniques while bringing a modern global twist to the dining experience. This is a leadership role requiring excellent culinary skills, team management abilities, and a passion for delivering exceptional food quality.
Key Responsibilities:
- Lead the planning, development, and execution of authentic Japanese menus, including sushi, sashimi, robatayaki, ramen, and kaiseki-style dishes.
- Incorporate international flavors and techniques to create fusion and seasonal specials that appeal to a global clientele.
- Maintain high standards of hygiene, food safety, and kitchen organization in line with local regulations and global best practices.
- Train, mentor, and supervise kitchen staff, ensuring continuous development and consistency in food preparation.
- Collaborate with the procurement team to source premium Japanese and international ingredients.
- Manage kitchen budget, inventory control, and cost-effective planning without compromising on quality.
- Innovate new dishes and presentation styles in line with current culinary trends.
- Coordinate with front-of-house team to ensure seamless kitchen-dining room operations and exceptional guest satisfaction.
Qualifications:
- Minimum 7–10 years of culinary experience, with at least 3 years in a Head Chef role.
- Formal culinary training (Japanese culinary school or equivalent international certification preferred).
- Proven expertise in traditional and modern Japanese cooking.
- Experience working in multicultural, high-end restaurants or luxury hotels with international cuisine exposure.
- Strong leadership, organizational, and communication skills.
- Ability to work under pressure and adapt to a fast-paced environment.
- Fluent in English; knowledge of Japanese is a plus.
