Freelance Service Captain & Sales Ambassador (Winter Pop-Up)

Hours: 4:00 pm – 1:00 am (shifts/roster)
About the role
We’re hiring a charismatic, sales-driven front-of-house pro to lead guest experience on busy winter nights. You’ll host, upsell, and orchestrate service across ~40 tables, creating a warm, witty atmosphere while hitting agreed daily revenue targets (food, drinks, shisha, desserts).
What you’ll do (key responsibilities)
- Own the floor: greet, seat, and manage guest flow; coordinate with FOH/BOH and shisha team.
- Drive sales: proactive table touches, menu storytelling, bundles/upsells (e.g., premium shisha, hot chocolate special, dessert pairings).
- Set the vibe: keep energy high, be naturally funny (appropriately witty), read the room, and build regulars.
- Quality & speed: ensure courses land on time; handle VIPs, large groups, and recover service hiccups fast.
- Payments & tech: handle POS, split bills, Apple/Google Pay; support social/QR ordering as needed.
- Standards & safety: uphold hygiene, shisha safety, and brand guidelines; close-of-day cash/tip recon.
- Reporting: end-of-shift sales summary vs targets; guest feedback & hit-list for the next day.
Must-have qualifications
- 3–5+ years premium casual or upscale lounge experience in the UAE (shisha venue experience is a big plus).
- Documented upselling success (e.g., +15–30% check uplift, high dessert/shisha conversion).
- Bilingual: English required; Arabic strongly preferred.
- Charisma & humor: warm presence, tasteful banter, confident on a busy floor.
- Strong menu knowledge (grill, Arabic mezze, specialty beverages) + shisha flavors & etiquette.
- POS proficiency; calm under pressure; excellent grooming & professional conduct.
- Right to freelance in the UAE (freelance permit/visa) and, if required locally, valid food handler/health card.
Nice-to-haves
- Basic content skills (comfortable on camera for IG stories/live moments).
- Event/entertainment coordination exposure (DJs/oud players/crowd moments).
- Driver’s license and own transport.
KPIs & targets (aligned before start)
- Daily revenue target per shift (tables × occupancy × avg bill).
- Attachment rate targets: desserts, premium shisha, specialty hot drinks.
- Guest satisfaction: repeat-visit invites captured, complaint recovery score.
- Speed & accuracy: ticket times, voids/comps kept minimal.
Schedule & compensation
- Contract: Freelance, Oct 15 – Jan 15 (peak season).
- Pay: Competitive day rate + tiered commission on net sales (with weekend accelerator).
- Bonuses: Hitting stretch revenue goals; social referrals converting to bookings.
- Perks: Staff meal, uniform elements, transport allowance (as agreed).
