Role summary
You will own daily cake production end-to-end—from mixing and baking to finishing and QC. You’ll set standards, plan production, training , and ensure on-time delivery for retail and custom orders.
Key responsibilities
Baking & Production
- Plan daily/weekly production; scale recipes; run mixing, baking, cooling, wrapping, and labeling.
- Prepare syrups, creams, ganache, fillings; manage batch records and temperature logs.
- Hit consistent yields, sizes, and textures; manage allergen and cross-contamination controls.
Decorating & Finishing
- Level, soak, fill, crumb-coat, and finish cakes; buttercream & fondant work, piping, toppers.
- Translate customer briefs into sketches/mockups; quote lead times; approve final QC.
- Photograph finished products for catalogue/Instagram; maintain SKU library with pricing.
Operations & Team
- Create daily production boards; prioritize rush and pre-orders; coordinate delivery cut-offs.
- Train and supervise junior team members; assign tasks and check standards.
- Maintain hygiene and safety (PIC/HACCP), cleaning schedules, and equipment care.
- Coordinate with Order Coordinator and Florist team for combo orders and event timelines.
Inventory & Vendors
- Set par levels for ingredients and décor items; place orders; receive and check deliveries.
- Track wastage/spoilage; suggest recipe or process improvements to reduce costs.
Requirements
- 3+ years professional cake production & decorating (portfolio required).
- Mastery of classic sponges, mousse/cream fillings, buttercream & fondant finishing.
- Fast, organized, and calm under time pressure; strong English for customer notes.
- Comfortable with POS/WhatsApp Business, basic spreadsheets, and photo uploads.
- Food safety knowledge (PIC/HACCP or willingness to obtain).
- Able to lift 20 kg and work early/late or weekend shifts as needed.
